Leah wanted to make her own cheese by curdling milk, or causing it to form clumps. She knew that adding an acidic liquid, like lemon juice, would curdle milk, but she was curious as to whether the fat content of the milk would affect the size of the clumps. Leah set up three pots: one with two cups of fat-free milk, one with two cups of low-fat milk, and one with two cups of full-fat milk. She added four tablespoons of lemon juice to each pot and set them on her stove over medium heat. After 20 minutes, she drained the remaining milk and measured the size of the clumps in each pot.
